Pousse Café, So You Say

Until recently most had never heard of Pousse Cafe. Originally a Pousse Cafe was a basic after dinner cordial. The Miriam-Webster dictionary defines it as “coffee chaser”, and cites the first known use in 1862. Recently it has evolved into a layered trendy party drink with multiple flavors. The idea is to use liquors with different specific gravity (i.e. weights) so that they float on top of one another creating a colorful presentation. Usually this is best achieved by layering the liquors while pouring over the back of a spoon. The resulting drink not only has a colorful presentation for your guests, but also complex flavor that they will enjoy. While there is no one specific recipe, we offer you several to try, or create your own! At least now you know what to do with those cordials sitting in the liquor cabinet.
